Bran Muffins- yum!

The other week I made bran muffins and they are de-li-cious! and nutritious. I'm making them again now for a work meeting - but ran out of wheat bran & am experimenting with oat bran so I hope they still turn out good. They are best with canola harvest margarine. And bonus! the batter refrigerates for up to a month. Here is the recipe:

Refrigerator Bran Muffins

1 c hot water

3 c 100% bran cereal

1 c chopped dates or raisins

1/3 – 1/2 c oil

2 eggs

½ c sugar or honey

2 c buttermilk

2 ½ c whole wheat flour

2 tsp soda

1 tsp salt

Pour hot water over cereal & dates in large bowl. Let stand while preparing other ingredients. In blender, combine oil, eggs, honey & buttermilk. Pulse to mix well. Pour into bran mixture, just long enough to blend ingredients. Stir in with dry ingredients. Drop by tablespoonfuls into nonstick muffin pans filling 2/3 full. Bake 400 for 15-18 min. Yield: 3 dozen muffins. Batter can be refrigerated for up to a month in an airtight container.
